Pasta Cake:***** On weekends I tend to make "comfort" food. Something with some consistency to it, like a big ole' pasta "cake"! You prepare the pasta, make the cheese/egg mixture and then bake in a spring form pan. Needless to say this hit the spot. I decided to serve this with a simple salad with EVOO and rice vinegar dressing and grilled plantains with a cinnamon brown sugar glaze!
