Roasted Salmon

I have been wanting to try salmon at home for a while now. I found a simple and easy recipe for roasted salmon. I purchased 1 lb of fresh salmon and asked the fish monger to cut it into strips for me. I then drizzled with EVOO, s&p, and baked at 400 degrees for 15-20 minutes. In this weeks market box I received more fresh strawberries and lettuce. I decided to pair these together with a balsamic vinaigrette and a sprinkling of cashews. Yummy!
