Gouda Cheese Fondue with Roasted Vegetables

Andy and I our enjoying a nice New Years Eve at home. To bring in the New Year we shared a wonderful cheese fondue with rosemary roasted vegetables. We've started the Chronicles of Narnia movie Prince Caspian as we await our champagne toast.

  • 1 clove garlic, halved
  • 1 cup dry white wine
  • 1 teaspoon freshly squeezed lemon juice
  • 12 ounces Gouda cheese, (rind trimmed), shredded
  • 2 tablespoons cornstarch
  • 1 pinch freshly grated nutmeg
  • 1 pinch cayenne pepper
Dippers:
  • Cubed or torn bread, roasted steak fries, broccoli, cauliflower, carrots and/or sliced apples or pears

Rub the cut sides of the garlic on the inside of a fondue pot or a heavy 2-qt saucepan; discard the garlic. Combine wine and lemon juice in a small pot over medium heat. Toss together both cheeses and cornstarch in a large bowl. When the wine comes to a boil, slowly add the cheese and cornstarch mixture, whisking continuously until smooth. Season with nutmeg and cayenne. Transfer to a small slow cooker set to low and serve with the selection of dippers. Fondue should hold on low setting for up to 1 hour.

I saw that Jen over at Running with Food finally found the Arnold's Sandwich Thins so it gave me the courage to go out and hunt for them this afternoon too. I stopped into Kroger and found them located in the bread aisle!! The whole wheat variety is 100 calories per sandwich and 6 grams of fiber!!!

For now I've stuck them in the freezer (we don't eat bread that often) but I can't wait to try them soon!

Besides my favorite holiday recipes, I’ve compiled a list of my top recipes of 2008.  As you can see it was a delicious year and I had a tough time narrowing them down...

Potato & Chive Pancake

I've been craving a good potato pancake for awhile now, today my taste buds met their match!  I love making potato pancakes out of leftover mashed potatoes but tonight I decided to go for an extra crunchy hash brown version.  Don't skimp on the salt, potatoes need a lot of it.

  • 16 oz shredded potatoes, fresh or thawed
  • 2 garlic cloves, minced
  • 1/4 cup chives, chopped
  • 2 egg whites, lightly beaten
  • 2 teaspoons kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil

Place an oven rack in the center of the oven. Preheat the oven to 450 degrees F.

Lay the potatoes on a kitchen towel, bring the corners of the towels together and squeeze out the moisture. Place in a large bowl, add the garlic, chives, egg whites, salt, and pepper. Mix well until all ingredients are combined.

In a 12-inch skillet, heat the oil over medium heat. Add the potato mixture to the pan. Using a spatula, press the mixture evenly into the pan. Cook for 6 minutes or until the edge of the mixture just starts to brown. Place in the oven and bake for 20 to 25 minutes or until the top of the pancake starts to brown and the edges are crispy.

Allow pancake to cool for about 5 minutes. Slide the pancake out of the pan onto a cutting board and cut into wedges and arrange on a serving platter.

 

I used my new Le Cruset pot to reheat the the last bit of our buffalo chicken chili.  We both loved this meal!
