Kath's Classic Banana Oatmeal

This morning, with Tropical Storm Hanna brewing outside, I thought the best way to keep me calm and centered was to start the day off with a nice bowl of warm old-fashioned banana oatmeal.  Hat's off to Kath - this healthy breakfast indulgence was thoroughly enjoyed.  And almost made me forget about Hanna's rainy, windy weather at my door step.

Banana Oatmeal for Two

In a medium saucepan over medium heat add the following:

  • 2/3 cup oats
  • 2/3 cup 1% milk
  • 2/3 cup water
  • 1/2 tsp salt
  • 1 banana, sliced

Stir for 6-8 minutes, until it begins to thicken. When there is approximately 1 minute left of cooking stir in the following ingredients:

  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 tsp ground flax seed
  • 2 Tbsp brown sugar
  • 1/4 cup wheat or spelt berries, optional

Additions of flax, cinnamon, vanilla and brown sugar

Addition of spelt berries (pre-cooked, method here)

Pour into breakfast bowls and top each with the following:

  • 1 Tbsp granola
  • 1 Tbsp natural peanut butter

The banana's were marshmallow-y just as Kath had described.

Served with a skim milk kona coffee and vitamins.

I may be treating myself to warm oatmeal on the weekends verses my weekday muesli.


I'm looking forward to grilled cheese and soup for lunch and a roasted butternut squash pizza with romaine salad for dinner, and mug full of cappuccino brownies made in the slow cooker for dessert!
