We're sadly winding down the beach vacation. It's been a beautiful week. We've had fun visiting with my parents, watching movies, taking beach walks, reading on the porch, cooking together, laughing at the four dogs, and taking naps on the couch whenever we felt like it. We're having an adventure eating leftovers. This morning I deiced on a simple breakfast of a sliced Washington apple with a cinnamon sprinkling, and two pieces of TJ's Sprouted Multi-Grain toast (one with natural pb and the other with local honey).
Lunch was a delivery thin crust cheese pizza (with our own toppings added to it) and bread sticks with an "empty the fridge" side salad.
I used up the rest of our romaine leaves, Mom's garden grown purple bell pepper, basil, and feta in the salad with a drizzle of light ranch.
On the cheese pizza I caramelized half of a red onion with a couple of Mom's garden grown yellow bell peppers - sprinkled all of this with Penzey's pizza seasoning (LOVE this stuff - mixture of fennel seed, oregano, garlic, black pepper, basil, white onion, crushed red pepper, and cayenne red pepper).
I also discovered an amazing snack: marshmallow's with peanut butter - mmm!
For dinner we snacked on Elodie Farms camembert and goat cheese, and Hall's Beer Cheese and crackers.
I baked-off a couple Zucchini Chocolate Chip cookies for dessert and am saving them for the pilot episode of "The Ex List".
