Kath's Pumpkin Butterscotch Oatmeal

This week I'll be having Kath's Pumpkin Butterscotch Oatmeal combination.  I love her classic banana oatmeal but thought it was time to venture out when I saw this tempting pairing that she said was her favorite kind!

Serves 6 large or 8-10 small portions

  • 2 1/3 cup oats,
  • 2 1/3 cups 1% milk
  • 2 1/3 cups water
  • 2 medium bananas
  • 2 tsp salt
  • 1/4 cup brown sugar
  • 1-15 oz can pumpkin
  • 1/3 cup pre-cooked wheat berries
  • 1/3 cup ground flax seeds
  • vanilla, cinnamon, nutmeg
  • 1 Tbsp butterscotch chips, per portion

I portioned out 10 - 2/3 cup portions for Andy and I to reheat throughout the week.
