Chili with Potato Chip "Fries"

This afternoon has been BEAUTIFUL with the SUN shining bright!  I enjoyed 25 minutes of Priscilla's Yoga Stretches and then 30 minutes of Pilates Weight Loss for Beginners.

We finished the evening off with chili baked "fries".  I sliced two yukon gold potatoes, tossed them with 1 tbsp EVOO, s&p and then baked them at 425 degrees for 20-25 minutes.  After the potatoes were golden brown I topped them with reheated leftover chili. 

Dessert will be my third slice of Coconut Banana Date Bread.  I've really been enjoying this combination of goodness.
