Coconut Banana Date Bread

This warm and naturally sweet bread tops off a cold quite nicely.

•    1/4 cup Smart Balance
•    1/4 cup sugar
•    2 ripe bananas
•    1/2 cup apple sauce
•    1 egg and 1 egg white
•    6 tablespoons milk
•    1 teaspoon vanilla extract
•    2 cups whole wheat flour
•    2 teaspoons baking powder
•    1 teaspoon baking soda
•    1/4 teaspoon salt
•    2/3 cup chopped dates, divided
•    1/3 cup chopped walnuts
•    2 tablespoons shredded coconut


1. Cream together the butter and sugar.
2. Add in banana and apple sauce, mix until smooth.
3. Add in eggs, beating after each one.
4. Add in milk and extract and mix until smooth.
5. Sift together flour, salt, baking soda, and baking powder and add to wet ingredients, mixing lightly until everything comes together.
6. Fold in 1/3 cup chopped dates.
7. Spread in a greased 9×9″ pan. foodblog 009
8. Sprinkle with remaining dates, walnuts and coconut.
9. Bake for 40 minutes at 350 degrees.
