Pounti Meat Loaf

I saw this prune studded meatloaf in a magazine recently and fell in love with the thought of it!  Pounti is an Auvergne-style meat loaf with studded with sweet prunes.  The meatloaf was scrumptious, this is my favorite meatloaf to date!  The outside was crisp and golden and the prunes on the top caramelized…they were warm and gooey inside too!

  • 3/4 cup quick-cooking oats
  • 1/2 cup skim milk
  • 1 medium onion, finely chopped
  • 1 pound ground turkey breast
  • 1 pound ground veal
  • 1 egg and 1 egg white, beaten
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • 2 tbsp chopped chives
  • 20 pitted prunes

    Preheat the oven to 400 degrees F.

    In a small bowl, stir together the oats and milk. In a large bowl combine the ground meats, oat mixture, chopped onion, spinach, eggs, chives, salt and a few grinds of pepper. Mix just until well combined. Fold in prunes.

    Transfer the mixture to a 9 by 13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high.  Drizzle with a tbsp olive oil.  Bake for about 1 hour or until an instant-read thermometer registers 160 degrees F. Remove from the oven and let rest for 10 to 15 minutes before slicing.


    Serves 8, 1-inch thick slices

    I love the idea of the prunes in the meatloaf. What a great recipe!

    When I was little and my mom made meatloaf, she used to put some cheddar cheese in the middle... I remember I liked that.
