Tonight’s dinner was a great way to incorporate a couple of our fresh CSA items and last nights leftover chicken and bell peppers. This was a really great, light and refreshing, dinner. Andy commented three times that he really liked this; maybe I can use this idea with other types of leftovers in the future.
- leftover Jerk Chicken and pepper mixture
- 1/4 cup sweet chili sauce
- 1 green leaf lettuce head, washed and leaves gently removed for cups
- 1/4 cup honey-roasted peanuts, chopped
- Juice of 1 lime
- 1 handful basil, chopped
Mix the leftovers with the chili sauce. Reheat and reduce sauce over medium low heat.
To serve, lay the lettuce leaves out onto a platter then scoop some of the chicken mixture onto each leaf. Sprinkle with the chopped peanuts, lime juice and basil.
Spring CSA – Week 5
Andy offered to go to my procedure with me…but I didn’t want to forfeit my CSA basket…only a cook would trade the comfort of her husband accompanying her for the peace and joy that a fresh basket of local produce provides. Or then again, I might just be nuts.
2 bags of baby spinach
1 bag of lettuce mix
1 head of green leaf lettuce
1 bundle of spring onions
1 pint of sugar snap peas
