This is the best quiche or frittata-style recipe! I love the body that the small amount of baking mix gives to the egg mixture, perfect balance. I added cooked bacon and green onions, but like most egg dishes…anything goes!
1 1/2 cups milk
1/2 cup whole wheat baking mix
4 slices bacon, cooked and crumbled
1/3 cup shredded cheddar cheese
2 green onions, diced
Preheat oven to 350 degrees F.
In a mixing bowl, combine all ingredients. Beat on low speed for 3 minutes or until blended. Transfer mixture to a greased 9-in. pie plate (or oven proof sauté pan). Sprinkle with cheese.
Bake, uncovered, for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.
