A couple weeks ago, I was reminded that Rue Cler sells individual sized rounds of pizza dough for a buck a piece. On Friday morning I gave them a call and asked that they set two aside for me. I normally make my own dough, but we’ve been experimenting with the recipe a bit and looking for something different…perhaps chewier with a nice exterior crunch.
We’ve found our new love…
With the help of a dusting of cornmeal and allowing the dough to rest between stretching’s we had a perfect individual pizza. Topped with sauce, artichokes, green olives, and cheese. These pizzas were delicious!
I split my dough ball in half and made one identical in toppings to the above and the second with lightly sautéed Granny Smith apples with a cinnamon sugar sprinkling.
Smeared with sunflower butter (heated and mixed with a few drops of water to make a spreadable paste).
