Smoked Mozzarella Chapata

  • 1 loaf crusty bread, split in half lengthwise
  • 2 to 3 large cloves garlic, halved
  • 2 small ripe tomatoes, halved
  • smoked mozzarella, sliced (optional)
  • Salt and pepper
  • EVOO – Extra Virgin Olive Oil, for liberal drizzling

Preheat broiler.

Rub the bread with the cut garlic and the ripe tomatoes; top with cheese. Season with salt and pepper. Pop the bread under the broiler, until golden brown and toasted. Cut into portions and drizzle with EVOO.
